I am sure that there is such a thing as too much coconut. One day, I will eat something and think to myself: ‘that was a little too much coconut for me.’ I genuinely thought that this coconut bar might be the one to send me over the edge:  it is basically just sugar rolled in shredded coconut molded into bar form, after all. But instead, it was just plain delightful. It’s chewy and coconutty and on a cold grey Scottish day, it’s the perfect tropical pick-me-up. If you like coconut, that is.
